Description

Ingredients
Nonstick cooking spray, for the pan
1/3 cup light brown sugar
2 teaspoons ground cinnamon
2 apples (any kind), peeled and chopped
2/3 cup plus 2 tablespoons granulated sugar
1/2 cup (1 stick) butter, softened
2 large eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup plus 1 to 3 tablespoons milk or almond milk
1/2 cup powdered sugar
Salt to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with nonstick cooking spray.
- In a small bowl, mix together the light brown sugar and ground cinnamon. Set aside. Toss the chopped apples in 2 tablespoons of granulated sugar and set aside.
- In a large mixing bowl, cream together the softened butter and the remaining granulated sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and a pinch of salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the dry ingredients. Mix until just combined.
- Spread half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture evenly over the batter. Layer half of the chopped apples on top. Repeat with the remaining batter, cinnamon-sugar, and apples.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before removing to a wire rack to cool completely. In a small bowl, mix the powdered sugar with enough milk to achieve a drizzling consistency. Drizzle the glaze over the cooled bread.
