Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 1 cup ketchup
  • 1 teaspoon mustard
  • ½ cup brown sugar, packed
  • 2 teaspoons Worcestershire sauce
  • 2 (15 oz) cans vegetarian baked beans (or regular baked beans without meat)
  • Salt & black pepper, to taste
  • 1 tablespoon butter

Instructions

1. Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.

2. Cook the Ground Beef

  • In a deep skillet, brown the ground beef over medium heat until no longer pink.
  • Add the diced onion and bell pepper to the skillet and cook until softened. Drain any excess grease.
  • Tip: Substitute half of the bell pepper with jalapeño or poblano for extra heat.

3. Add the Seasonings

  • Stir in the ketchup and mix to combine.
  • Add mustard, Worcestershire sauce, and brown sugar, stirring again.
  • Taste for seasoning and add salt and black pepper as needed.

4. Add the Beans

  • Stir in the baked beans (with their juice) until everything is well combined.

5. Assemble & Bake

  • Pour the beef and baked bean mixture into the prepared baking dish. Spread evenly.
  • Cover with foil and bake for 45 minutes.

6. Serve & Enjoy

  • Remove from the oven and let cool slightly before serving. Enjoy!

Notes

  • For extra spice, swap green bell pepper for jalapeño or add hot sauce.
  • For a smoky flavor, mix in 1 teaspoon of smoked paprika.
  • For a cheesier casserole, sprinkle shredded cheddar cheese on top before baking.
  • To make it a full meal, serve with cornbread, rice, or a side salad.
