Ingredients

2 snapper fillets

1 tsp Cajun seasoning

1 tsp garlic paste (or 3 cloves minced)

1 tsp lemon pepper

1 tsp black pepper

1 tsp paprika

Fresh rosemary, basil, oregano, and thyme (or dried herbs—use 1–2 types)

½ tsp chili flakes (optional)

3 tbsp olive oil

2 tbsp butter

Salt, to taste

Carrots, tomatoes, and bell peppers (or other vegetables of choice)

Lemon slices


Instructions

  • Preheat Oven: Set oven to 400°F (200°C).

  • Prepare Marinade: Mix Cajun seasoning, garlic, lemon pepper, paprika, black pepper, herbs, chili flakes (optional), olive oil, and salt.

  • Marinate Fish: Pat snapper fillets dry. Rub marinade over both sides, reserving about 2 teaspoons.

  • Season Vegetables: Toss chopped vegetables with reserved marinade and place in a baking dish.

  • Assemble: Lay the marinated fish over the vegetables. Top with 1 tbsp butter and lemon slices per fillet.

  • Bake: Bake uncovered for 15–30 minutes (depending on thickness), until the fish flakes easily with a fork.

Notes

Other Fish Options: Tilapia, cod, or haddock work great in place of snapper.

Mild Option: Omit chili flakes or reduce Cajun seasoning for a less spicy dish.

Herb Swaps: Use fresh dill, parsley, or cilantro for different herbal notes.
