Ingredients
1 cup (120g) all-purpose flour
½ tsp baking soda
½ tsp cinnamon
¼ tsp salt
½ cup (1 stick / 115g) unsalted butter, melted
⅓ cup (65g) brown sugar
¼ cup (50g) granulated sugar
½ cup (120g) mashed ripe banana (about 1 medium banana)
1 tsp vanilla extract
½ cup (90g) chocolate chips (or walnuts for crunch)
Optional Topping: Cinnamon sugar for rolling
Instructions

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a bowl, whisk together the flour, baking soda, cinnamon, and salt.

In a separate bowl, mix the melted butter, sugars, mashed banana, and vanilla extract.

Scoop 1.5 tablespoons of dough per cookie and space them 2 inches apart on the baking sheet.
