Instructions

1. Preheat the Oven

  • Preheat oven to 350°F (175°C).
  • Lightly grease an 8×8-inch baking pan or line with parchment paper.

2. Mix the Dry Ingredients

  • In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.

3. Combine the Wet Ingredients

  • In another bowl, whisk together soy milk, vegetable oil, mashed bananas, vinegar, and vanilla extract until well blended.

4. Combine Wet & Dry Mixtures

  • Pour the wet ingredients into the dry ingredients.
  • Gently whisk until just combined (do not overmix).

5. Fold in Chocolate Chips

  • Using a spatula, fold in chocolate chips until evenly distributed.

6. Bake the Cake

  • Pour the batter into the prepared baking pan, spreading it evenly.
  • Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool & Serve

  • Let the cake cool in the pan on a wire rack.
