Ingredients

Olive oil

1 onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 cup dried brown lentils

1 can (14.5 oz) diced tomatoes

4 cups vegetable broth

Ground cumin, coriander, all-spice, ginger

Salt and pepper to taste

Fresh lemon juice


Instructions

  • Cook the Vegetables: Heat olive oil in a pot. Sauté diced onions, garlic, carrots, and celery until softened, about 5 minutes.
