Description

An easy, no-yeast cheesy bread that is fluffy and flavorful with melty cheddar, nutty Parmesan, and a hint of garlic, baked to golden perfection with a buttery finish.


Ingredients

2 cups self-rising flour (or all-purpose flour + 2 tsp baking powder + ½ tsp salt)

1 cup plain Greek yogurt (full-fat recommended)

½ cup shredded cheddar cheese

½ cup grated Parmesan cheese

½ tsp garlic powder (optional)

¼ tsp black pepper

12 tbsp milk (only if dough is too dry)

¼ cup shredded cheddar cheese (for topping)

¼ cup grated Parmesan cheese (for topping)

1 tbsp melted butter (for brushing)

Chopped fresh parsley (optional, for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine flour, Greek yogurt, cheddar, Parmesan, garlic powder, and black pepper. Mix until a shaggy dough forms. If too dry, add 1–2 tablespoons of milk.
  3. Turn dough onto a floured surface and shape into a rustic round loaf about 6–7 inches wide. Place on prepared baking sheet. Score an “X” on top using a sharp knife.
  4. Sprinkle the top with remaining cheddar and Parmesan cheese.
  5. Bake for 20–25 minutes until golden brown and sounds hollow when tapped.
  6. Brush top immediately with melted butter after removing from oven.
  7. Let cool for 5 minutes. Slice, garnish with parsley if desired, and serve warm.

Notes

Store leftover bread in an airtight container or wrapped in foil at room temperature for up to 2 days.

Reheat in a 350°F (175°C) oven for 5–7 minutes to refresh crust.

Avoid microwaving to prevent chewy texture.

Use all-purpose flour with baking powder and salt if self-rising flour is unavailable.

Full-fat Greek yogurt yields best texture; low-fat can be used but may be drier.

Add chopped olives, sun-dried tomatoes, or bacon bits for extra flavor.

Sprinkle extra flour if dough is sticky when shaping.

Can be baked in a loaf pan; adjust baking time to about 30 minutes.

Score bread shallowly about ¼ inch deep to allow expansion.
