  • 1 teaspoon (5g) baking soda
  • ¼ teaspoon (1.25g) salt
  • ¼ cup (50g) granulated sugar (for rolling)

Instructions

  • Preheat Oven: Set the oven to 350°F (177°C) and line two baking sheets with parchment paper or silicone baking mats.
  • Cream Butter and Sugars: In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  • Mix Wet Ingredients: Add the egg yolk, corn syrup, vanilla extract, and maple extract (or maple syrup). Mix until fully incorporated.
  • Combine Dry Ingredients: In a separate bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt.
  • Form Dough: Gradually add the dry ingredients to the wet mixture, mixing until a smooth dough forms.
  • Roll in Sugar: Scoop 1.5-inch (3.8 cm) dough balls and roll them in the ¼ cup granulated sugar to coat.
  • Bake: Place cookies 2 inches (5 cm) apart on baking sheets and bake for 10-12 minutes, until set but soft in the center.
  • Cool & Serve: Let cookies cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
