Ingredients

  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 can (15 ounces) tomato sauce
  • 1 cup heavy cream
  • 1 tablespoon fresh cilantro, chopped (for garnish)

Instructions

  1. In a large bowl, mix yogurt, lemon juice, cumin, coriander, turmeric, garam masala, chili powder, and salt. Add chicken pieces and mix well. Cover and refrigerate to marinate for at least 1 hour, or overnight for deeper flavor.
  2. Heat vegetable oil in a large skillet over medium heat. Sauté the onion until soft and golden, about 5-7 minutes.
  3. Add garlic and ginger; cook for 1-2 minutes until fragrant.
  4. Add marinated chicken to the skillet and cook until browned on all sides, about 5-7 minutes.
  5. Stir in the tomato sauce and bring to a simmer. Reduce heat and cook for 15 minutes, stirring occasionally.
  6. Add heavy cream and simmer for another 5 minutes until heated through. Adjust seasoning to taste.
  7. Serve hot, garnished with fresh cilantro, over rice or with naan bread.
