Ingredients

For the Cookies:

1 cup unsalted butter, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

1/3 cup cocoa powder

1/2 cup seedless raspberry jam

For the Ganache Drizzle:

1/2 cup semi-sweet chocolate chips

1 tablespoon heavy cream


Instructions

  1. Prepare the Cookie Dough: Cream butter and powdered sugar until light and fluffy. Add vanilla, then mix in the flour, cocoa powder, and salt. Chill the dough for 1 hour.

  3. Assemble the Sandwich Cookies: Spread raspberry jam on half the cooled cookies. Sandwich with the remaining cookies.
  4. Make the Ganache Drizzle: Melt chocolate chips and heavy cream in 20-second intervals in the microwave, stirring in between. Drizzle over assembled cookies and let set.
