Ingredients
For the Cookies:
1 cup unsalted butter, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/3 cup cocoa powder
1/4 teaspoon salt
1/2 cup seedless raspberry jam
For the Ganache Drizzle:
1/2 cup semi-sweet chocolate chips
1 tablespoon heavy cream
Instructions
- Prepare the Cookie Dough: Cream butter and powdered sugar until light and fluffy. Add vanilla, then mix in the flour, cocoa powder, and salt. Chill the dough for 1 hour.
- Roll and Bake the Cookies: Preheat oven to 325°F (160°C). Roll chilled dough to 1/8 inch thickness. Cut into shapes and bake for 10-12 minutes. Cool completely on a wire rack.
- Assemble the Sandwich Cookies: Spread raspberry jam on half the cooled cookies. Sandwich with the remaining cookies.
- Make the Ganache Drizzle: Melt chocolate chips and heavy cream in 20-second intervals in the microwave, stirring in between. Drizzle over assembled cookies and let set.
Notes
Jam Tips: Spread a thin layer of jam to prevent leakage during baking.
Chocolate Variations: Substitute semi-sweet chocolate with dark or milk chocolate for different flavors.
Decorative Drizzle: Use a piping bag for a more elegant ganache design.
