Ingredients
For the Sandwiches
- 2 plain bagels (or your preferred variety)
- 3 tbsp unsalted butter, divided
- 1 small onion, thinly sliced
- ½ lb shaved steak
- 4 large eggs, beaten
- 2 slices American cheese (or cheddar/provolone)
- 1 tsp Montreal steak seasoning
- 1 tbsp Worcestershire sauce
- ½ tsp salt
For the Breakfast Sauce
- ½ cup mayonnaise
- 2 tbsp mustard
- ¼ tsp dried dill
Instructions
1. Prepare the Breakfast Sauce
- In a small bowl, combine mayonnaise, mustard, and dried dill.
- Mix well and refrigerate until ready to use.
2. Cook the Onions
- In a skillet over medium heat, melt 1 tablespoon of butter.
- Add sliced onions and a pinch of salt, cooking for about 5 minutes until softened and lightly browned.
- Remove onions from the skillet and set aside.
3. Cook the Steak
- In the same skillet, melt another tablespoon of butter over medium heat.
- Add shaved steak, Worcestershire sauce, Montreal steak seasoning, and salt.
- Cook for about 3-4 minutes until browned.
- Return the cooked onions to the skillet, mixing them with the steak.
- Form two piles of the steak and onion mixture and place a slice of cheese on each. Allow the cheese to melt.
4. Scramble the Eggs
- In the same skillet, melt the remaining tablespoon of butter over medium-low heat.
- Pour in the beaten eggs and scramble gently until soft and creamy.
5. Toast the Bagels
- While the eggs are cooking, toast the bagels until golden brown.
6. Assemble the Sandwiches
- Spread the breakfast sauce on the cut sides of the toasted bagels.
- On the bottom half of each bagel, layer half of the scrambled eggs, followed by the steak and onion mixture with melted cheese.
- Top with the other half of the bagel.
7. Serve
