Ingredients
- 1 cup almond flour

- 2 tablespoons olive oil

Instructions
1. Blend Wet Ingredients: In a blender, combine cottage cheese, egg, vanilla extract, and olive oil. Blend until smooth.
2. Combine Dry Ingredients: In a separate bowl, mix almond flour, sugar, baking soda, baking powder, and salt.
3. Combine Wet & Dry: Pour the wet mixture into the dry ingredients and stir until well combined.
4. Add Chocolate Chips: If desired, fold in chocolate chips.
5. Chill the Dough: Refrigerate dough for 30 minutes.
6. Bake: Preheat oven to 350°F. Scoop dough onto a lined baking sheet. Bake for 10-12 minutes, or until the edges are golden.
