Ingredients

2 tbsp butter

1 small onion, diced

2 cloves garlic, minced

1 medium carrot, diced

1 celery stalk, diced

3 cups cooked chicken, shredded

4 cups chicken broth

1 cup heavy cream

1 cup whole milk

16 oz potato gnocchi

1 cup fresh spinach, chopped

1 tsp dried thyme

½ tsp dried basil

½ tsp salt

¼ tsp black pepper

¼ cup grated Parmesan cheese


Instructions

  • Sauté Aromatics:
    In a large pot, melt butter over medium heat. Add onion, garlic, carrot, and celery. Cook until soft and fragrant, about 5-6 minutes.
