Description

Ingredients

1 lb ground Italian sausage

1 cup ditalini pasta

4 cups chicken broth

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 medium onion, diced

2 carrots, chopped

2 celery stalks, chopped

3 cloves garlic, minced

Salt and pepper to taste


Instructions

  • Brown the sausage in a large pot over medium heat for 5-7 minutes. Remove excess grease and set aside.

  • Sauté diced onions, carrots, celery, and garlic in the same pot until softened, about 4-5 minutes.

  • Add chicken broth and bring to a boil. Stir in the ditalini pasta and cook for about 8 minutes, until the pasta is al dente.

  • Reduce the heat and add heavy cream and Parmesan cheese, stirring until melted and smooth.

  • Taste and adjust seasoning with salt and pepper. Serve hot with optional bread or additional Parmesan on top.

Notes

Spicy: Use spicy Italian sausage for an extra kick.

Vegetarian: Omit the sausage and use vegetable broth for a lighter version.

Add-ins: Try adding spinach, kale, or white beans for more texture and nutrients.

Storage/Reheating: Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, add a little broth to bring it back to the right consistency. This soup can also be frozen for up to 3 months; just remember to add the pasta fresh when reheating.
