  • 1¼ cups cooked halal sausage, chopped and divided
  • 1 (32-ounce) bag frozen diced potatoes
  • 4 cups chicken broth
  • 1 (10.5-ounce) can cream of chicken soup
  • 8 ounces cream cheese, softened and cubed
  • 1 (1-ounce) package ranch dressing mix
  • ½ tsp black pepper
  • ½ tsp onion powder
  • 2 cups shredded sharp cheddar cheese
  • 1 cup half and half
  • Chopped green onions, for garnish

Instructions

. Combine Ingredients:

  • In a 6-quart slow cooker, add the frozen diced potatoes, chicken broth, cream of chicken soup, cream cheese, ranch dressing mix, black pepper, onion powder, and 1 cup chopped sausage.

2. Cook:

  • Cover and cook on LOW for 5-6 hours or HIGH for 2-3 hours, until the potatoes are tender.

3. Add Cheeses:

  • About 15 minutes before serving, stir in the shredded cheddar cheese and half and half.
  • Cover and let the cheese melt, then stir to combine.

4. Serve:

  • Ladle the soup into bowls and garnish with the remaining chopped sausage and chopped green onions.

  • Spicy Kick: Add diced jalapeños or a teaspoon of hot sauce to the soup for extra heat.
  • Dairy-Free: Use plant-based cream cheese and cheese alternatives, and ensure the broth is free of animal products.
