Description

This Delicious Brownie Ice Cream Cake combines rich, fudgy brownies with creamy ice cream, topped with whipped cream and chocolate syrup. It’s a perfect dessert for any occasion, offering layers of flavor and texture that will impress your guests.

Ingredients

1 cup unsalted butter (2 sticks)

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

½ teaspoon salt

½ teaspoon baking powder

1 quart of your favorite ice cream (such as chocolate, vanilla, or any mix you prefer)

Whipped cream

Chocolate syrup

Sprinkles or chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a medium saucepan, melt the unsalted butter over low heat. Remove from heat and allow to cool slightly.
  3. Stir in granulated sugar, mixing until combined. Add eggs one at a time, stirring well after each addition. Mix in vanilla extract.
  4. In a separate bowl, mix together flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, stirring until well combined and the batter is smooth.
  6. Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow cooling in the pan for at least 30 minutes.
  7. While the brownies are cooling, soften the ice cream slightly at room temperature for easier spreading.
  8. Once the brownies are cooled, remove from the pan and cut into even layers. Place one layer of brownies back into the baking dish. Spread a layer of softened ice cream on top, then cover with the second layer of brownies.
  9. Cover the assembled cake with plastic wrap and freeze for at least 2 hours, or until set.
  10. Once frozen, remove the cake from the freezer. Top it with whipped cream, chocolate syrup, and any desired garnishes like sprinkles or nuts.
  11. Cut into squares and serve immediately for the best texture and flavor.

Notes

You can use different ice cream flavors like mint chocolate chip, cookies and cream, or coffee for a fun twist.

Add-ins like chocolate chips, nuts, or caramel swirls can be incorporated into the brownie batter for extra texture and flavor.

This cake can be made gluten-free by using a gluten-free brownie mix or recipe.
