Ingredients
- 1 large egg (room temperature)
- ¼ cup cottage cheese (4% milk fat recommended)
- ½ cup shredded cheddar cheese
- ¼ cup coconut flour
- ½ tablespoon baking powder
- ⅛ teaspoon salt
- 3 teaspoons butter (divided, or use avocado/olive oil spray)
Instructions
- Preheat the Air Fryer: Set to 350°F. Add 1 teaspoon butter to each 4-ounce ramekin and preheat for 3 minutes.
- Mix the Ingredients: In a food processor, blend egg and cottage cheese. Add cheddar cheese, coconut flour, baking powder, and salt, then process into a wet dough.
- Form the Biscuits: Use a ⅓ cup measuring cup to scoop three mounds of dough. For a flatter biscuit, press them down slightly.
- Air Fry: Place the dough mounds into preheated ramekins and air fry for 10 minutes until golden brown.
- Butter & Serve: Let the biscuits cool for 5-10 minutes. Optionally, add a pat of butter on top and return to the air fryer for 1-2 minutes to melt.
