Ingredients
For the Cookies:
- 1 cup butter, softened
- 3/4 cup granulated sugar
- 1 (3 oz) box of lime Jello (set aside 1 tbsp of the powder for frosting)
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup granulated sugar (for rolling the cookies)
For the Frosting:
- 1/4 cup butter, softened
- 1 oz cream cheese, softened
- 2 cups powdered sugar
- 1–2 tbsp milk
- 1 tbsp lime Jello powder (reserved from box)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a stand mixer, cream together the butter and 3/4 cup sugar until smooth and creamy.
- Mix in the lime Jello powder and eggs, one at a time, mixing well after each.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
- Use a cookie scoop to form dough balls. Roll each ball in 1/4 cup sugar, coating evenly, and place on the prepared baking sheet. Flatten slightly with a glass.
- Bake for 8-10 minutes or until the edges are golden. Allow the cookies to cool completely on the baking sheet.
- For the frosting, beat together softened butter, cream cheese, powdered sugar, milk, and the reserved lime Jello powder until smooth and creamy.
- Spread the frosting over the cooled cookies and serve.
