Ingredients

For the Cookies:

  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 1 (3 oz) box of lime Jello (set aside 1 tbsp of the powder for frosting)
  • 2 eggs
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated sugar (for rolling the cookies)

For the Frosting:

  • 1/4 cup butter, softened
  • 1 oz cream cheese, softened
  • 2 cups powdered sugar
  • 12 tbsp milk
  • 1 tbsp lime Jello powder (reserved from box)

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • In a stand mixer, cream together the butter and 3/4 cup sugar until smooth and creamy.
  • Mix in the lime Jello powder and eggs, one at a time, mixing well after each.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
  • Use a cookie scoop to form dough balls. Roll each ball in 1/4 cup sugar, coating evenly, and place on the prepared baking sheet. Flatten slightly with a glass.
  • Bake for 8-10 minutes or until the edges are golden. Allow the cookies to cool completely on the baking sheet.
  • For the frosting, beat together softened butter, cream cheese, powdered sugar, milk, and the reserved lime Jello powder until smooth and creamy.
  • Spread the frosting over the cooled cookies and serve.

Notes

  • Different Jello Flavors: Swap lime Jello for other flavors like strawberry, orange, or cherry to create a different taste and color.
  • Colorful Frosting: Add food coloring to the frosting for a more vibrant look if desired.
  • Cut-Out Cookies: For cut-out cookies, refrigerate the dough for 2 hours, then roll it out and cut into shapes before baking.
