Instructions
-
Prepare the Noodles: Cook the Pancit Canton noodles according to the package instructions (typically boiling for 3-5 minutes), then drain and set aside.
-
Cook the Meat and Shrimp: In a large pan, heat vegetable oil over medium heat. Cook the chicken and shrimp until just cooked through, then remove from the pan and set aside.
-
Stir-Fry the Vegetables: In the same pan, sauté onions and garlic until fragrant. Add the carrots, bell peppers, and snow peas, cooking for 2-3 minutes until tender-crisp.
-
Combine Ingredients: Return the chicken and shrimp to the pan, add chicken broth, soy sauce, and fish sauce. Stir and simmer for 2-3 minutes to allow the flavors to meld.
-
Add the Noodles: Add the cooked noodles, tossing until everything is well combined and the noodles are coated with the sauce.
-
Season and Serve: Season with salt and pepper to taste. Serve with a squeeze of calamansi or lemon and garnish with chopped green onions.
Notes
Vegetables: Add more vegetables like mushrooms, peas, or baby corn for extra flavor and nutrition.
Sauce: For a deeper flavor, add oyster sauce or hoisin sauce.
Storage/Reheating: Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat with a splash of chicken broth or water to loosen up the noodles, stirring occasionally until heated through.
