Description

Fluffy Cottage Cheese Cloud Bread is a light, airy, and versatile low-carb, gluten-free bread alternative. Made with cottage cheese and eggs, this high-protein bread is perfect for sandwiches, healthy snacks, or as a side dish. It’s easy to make, diet-friendly, and guilt-free, making it a must-try for anyone looking for a tasty alternative to traditional bread.

Ingredients

  • 3 large eggs, separated
  • ½ cup cottage cheese, blended until smooth
  • ¼ teaspoon cream of tartar
  • ½ teaspoon salt
  • 1 tablespoon cornstarch or arrowroot powder (optional, for added structure)
  • 1 teaspoon honey or a pinch of sweetener (optional, for a hint of sweetness)

Instructions

  • Preheat the Oven:
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  • Separate the Eggs:
Separate the egg whites and yolks into two bowls, ensuring no yolk mixes with the whites.
  • Whip the Egg Whites:
Add the cream of tartar to the egg whites. Using a hand or stand mixer, beat the whites on high speed until stiff peaks form.
  • Prepare the Yolks Mixture:
In the egg yolks bowl, mix the blended cottage cheese, salt, cornstarch (if using), and honey or sweetener (if using) until smooth.
  • Combine Mixtures:
Gently fold the whipped egg whites into the yolk mixture in thirds, using a spatula to preserve the airiness.
  • Shape and Bake:
Scoop the mixture onto the prepared baking sheet to form 6–8 rounds or larger pieces. Use the back of a spoon to shape them evenly.
  • Bake:
Bake for 25–30 minutes until golden brown and set. Let the cloud bread cool completely on the baking sheet before serving.

Notes

  • For a savory twist, sprinkle herbs or grated cheese on top before baking.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Reheat in the oven or toaster for a crispier texture.
