Description

This French Onion and Beef Dinner is a flavorful one-pan meal featuring tender sirloin steak, caramelized onions, red potatoes, and Brussels sprouts in a rich balsamic-beef broth. Topped with melted Gruyère cheese, this dish offers gourmet flavors in a quick and easy weeknight meal.

Ingredients

  • 1 lb boneless beef sirloin steak
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/4 cup butter
  • 4 cups thinly sliced sweet onions (about 2 large onions)
  • 3 tablespoons balsamic vinegar
  • 2 teaspoons sugar
  • 2/3 cup beef broth
  • 2 medium red potatoes, thinly sliced (about 2 cups)
  • 8 oz Brussels sprouts, trimmed and quartered (about 3 cups)
  • 1/2 cup shredded Gruyère cheese

Instructions

  • Prepare the Steak:

    • Cut sirloin steak into thin strips. Season with salt and pepper.
  • Caramelize the Onions:

    • Melt butter in a large skillet over medium heat.
    • Add sliced onions and cook for 10 minutes, stirring occasionally.
    • Stir in balsamic vinegar and sugar. Continue cooking for 5-10 more minutes until onions are caramelized.
  • Sear the Steak:

    • Push onions to the side of the skillet.
    • Add steak strips and cook for 3-5 minutes, turning occasionally, until browned.
  • Simmer with Vegetables:

    • Pour in beef broth. Add sliced potatoes and Brussels sprouts.
    • Stir, cover, and cook for 10-15 minutes, stirring occasionally, until vegetables are tender.
  • Melt the Cheese & Serve:

    • Sprinkle Gruyère cheese over the top.
    • Cover for 1 minute to melt, then serve immediately.

Notes

  • Cheese Swap: Substitute Gruyère with Swiss, mozzarella, or provolone.
  • Low-Carb Option: Swap potatoes for cauliflower or turnips.
  • Vegetable Substitutes: Use mushrooms, asparagus, or bell peppers instead of Brussels sprouts.
  • Make it Spicy: Add red pepper flakes or hot sauce for extra heat.
  • Slow Cooker Option: Cook on low for 4-6 hours, adding cheese just before serving.
