Description

Ingredients

  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 2 large yellow onions, thinly sliced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp sugar
  • ½ tsp dried thyme
  • ¼ cup dry white wine (optional)
  • 2 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups beef or vegetable broth
  • ½ cup heavy cream
  • 8 oz pasta (penne, rigatoni, or your choice)
  • 1 cup shredded Gruyère cheese
  • ¼ cup grated Parmesan cheese
  • Fresh thyme or parsley, for garnish (optional)

Instructions

  1. Caramelize the Onions:

    • Heat butter and olive oil in a large skillet over medium heat.
    • Add sliced onions, salt, pepper, sugar, and dried thyme.
    • Cook, stirring occasionally, for 25-30 minutes, until onions are deep golden brown.
  2. Deglaze & Build the Sauce:

    • Pour in white wine (if using) and cook for 2 minutes until reduced.
    • Stir in garlic and cook for 1 minute until fragrant.
    • Sprinkle flour over the onions, stirring to coat.
    • Gradually pour in broth, stirring constantly until the sauce thickens.
    • Add heavy cream and let it simmer on low heat.
  3. Cook the Pasta:

    • While the sauce simmers, cook the pasta according to package instructions until al dente.
    • Drain and add pasta directly to the onion sauce.
  4. Add the Cheese:

    • Stir in Gruyère and Parmesan cheese until melted and combined.
  5. Serve & Garnish:

    • Serve hot, garnished with fresh thyme or parsley if desired.
