Ingredients
- 95 g (¾ cup) plain (all-purpose) flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 225 g (1¼ cups) dark chocolate, chopped
- 56 g (¼ cup) butter, salted or unsalted
- 2 large eggs, room temperature
- 100 g (¾ cup) caster sugar
- 90 g (½ cup) demerara sugar
- 1 teaspoon vanilla extract
- 85 g (½ cup) dark or milk chocolate chips (optional)
Instructions
- Preheat and Prepare: Preheat the oven to 160ºC (320ºF) fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
- Melt Chocolate and Butter: In a heatproof bowl, melt the dark chocolate and butter over simmering water or in the microwave, stirring until smooth. Stir in the vanilla extract.
- Whisk Eggs and Sugar: In another bowl, whisk the eggs, caster sugar, and demerara sugar together until the mixture is light, thick, and fluffy.
- Sift Dry Ingredients: Sift together the flour, cocoa powder, baking powder, and salt to evenly combine.
- Combine Mixtures: Gently fold the melted chocolate mixture into the whisked eggs and sugar, maintaining airiness. Gradually fold in the dry ingredients and chocolate chips (if using) until a thick, slightly gooey batter forms.
- Portion and Bake: Drop tablespoons of batter onto the prepared baking tray, spacing them well apart. Bake for 12-14 minutes, until the brookies have set and developed a crackly top.
- Cool: Allow the brookies to cool slightly on the baking tray before transferring them to a wire rack to cool completely.
Notes
- For an extra fudgy texture, slightly underbake the brookies.
- Add a sprinkle of sea salt on top before baking for a flavor contrast.
- These brookies store well in an airtight container for up to 4 days.
