Ingredients
- 1 lb (450g) sirloin steak, cut into bite-sized pieces
- Salt and freshly ground black pepper, to taste
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Pinch of red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
Sear the Steak Bites:
- Season the steak bites with salt and black pepper.
- Heat a large skillet over medium-high heat and melt 1 tablespoon of butter.
- Add the steak bites in a single layer (don’t overcrowd the pan).
- Sear for 2 minutes without moving them to develop a golden-brown crust.
- Flip and cook the other side for 1-2 minutes, or until they reach your desired doneness.
- Remove the steak bites from the skillet and set aside.
2. Make the Parmesan Cream Sauce:
- Reduce heat to medium and melt the remaining 1 tablespoon of butter in the same skillet.
- Add minced garlic and sauté for 30 seconds, until fragrant.
- Pour in the heavy cream, stirring to combine. Bring to a gentle simmer.
- Whisk in the Parmesan cheese until the sauce is smooth and creamy.
- Stir in the Italian seasoning and red pepper flakes (if using).
- Simmer for 2-3 minutes, allowing the sauce to thicken slightly.
- Taste and adjust seasoning with additional salt and pepper, if needed.
3. Combine and Serve:
- Return the steak bites to the skillet, tossing to coat them evenly in the Parmesan cream sauce.
- Let them warm through for 1-2 minutes.
- Garnish with chopped fresh parsley and serve immediately!
