Ingredients

  • 1 lb (450g) sirloin steak, cut into bite-sized pieces
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

Sear the Steak Bites:

  1. Season the steak bites with salt and black pepper.
  2. Heat a large skillet over medium-high heat and melt 1 tablespoon of butter.
  3. Add the steak bites in a single layer (don’t overcrowd the pan).
  4. Sear for 2 minutes without moving them to develop a golden-brown crust.
  5. Flip and cook the other side for 1-2 minutes, or until they reach your desired doneness.
  6. Remove the steak bites from the skillet and set aside.

2. Make the Parmesan Cream Sauce:

  1. Reduce heat to medium and melt the remaining 1 tablespoon of butter in the same skillet.
  2. Add minced garlic and sauté for 30 seconds, until fragrant.
  3. Pour in the heavy cream, stirring to combine. Bring to a gentle simmer.
  4. Whisk in the Parmesan cheese until the sauce is smooth and creamy.
  5. Stir in the Italian seasoning and red pepper flakes (if using).
  6. Simmer for 2-3 minutes, allowing the sauce to thicken slightly.
  7. Taste and adjust seasoning with additional salt and pepper, if needed.

3. Combine and Serve:

  1. Return the steak bites to the skillet, tossing to coat them evenly in the Parmesan cream sauce.
  2. Let them warm through for 1-2 minutes.
  3. Garnish with chopped fresh parsley and serve immediately!
