Ingredients
For the Cupcakes:
- 1 box vanilla cake mix (or your favorite homemade recipe)
- Eggs, oil, and water (as directed on the box)
For the Glow-in-the-Dark Frosting:
- 1 cup unsalted butter, softened
- 3–4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons tonic water (contains quinine, which glows under black light)
- Edible neon food coloring (optional)
For Decoration:
- Edible glitter or star-shaped sprinkles
- Black light (to activate the glow)
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Make the Cupcakes: Prepare the cupcake batter according to the package instructions. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cupcakes cool completely before frosting.
- Make the Glow-in-the-Dark Frosting: In a large mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar, one cup at a time, beating well after each addition. Stir in vanilla extract and tonic water until smooth and spreadable. Add neon food coloring for vibrant hues if desired.
- Decorate the Cupcakes: Spread or pipe the frosting onto the cooled cupcakes. Sprinkle with edible glitter or star-shaped sprinkles. Test the glow effect under a black light before serving.
- Serve and Enjoy: Display the cupcakes under a black light for the full glowing effect!
Notes
- For an even more magical effect, try mixing different neon food colors into the frosting to create a galaxy or cosmic swirl.
- Add black frosting details to make a spooky Halloween version.
- For smaller servings, try making mini cupcakes instead.
