Ingredients
Large raw shrimp (peeled, deveined, tails removed)
Orzo pasta

Cherry tomatoes
Sun-dried tomatoes
Kalamata or black olives
Feta cheese
Garlic
Italian seasoning
Smoked paprika
Red pepper flakes (optional)
Lime or lemon juice
Fresh herbs (basil or parsley)
Instructions

Cook Orzo:
Simmer orzo in chicken broth or water until tender, about 10 minutes. Add more liquid if needed to avoid sticking. -
Sear the Shrimp:
Heat olive oil in a large skillet. Add garlic, Italian seasoning, smoked paprika, and red pepper flakes. Sauté for 30 seconds, then add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside. -
Combine Ingredients:
In the same skillet, add cherry tomatoes, sun-dried tomatoes, and olives. Stir to combine and warm through. Add the cooked orzo and shrimp back to the pan. -
Finish and Garnish:
Drizzle with fresh lime or lemon juice, crumble feta cheese over the top, and sprinkle with chopped basil or parsley before serving.
