Ingredients

Large raw shrimp (peeled, deveined, tails removed)

Orzo pasta

Olive oil

Cherry tomatoes

Sun-dried tomatoes

Kalamata or black olives

Feta cheese

Garlic

Italian seasoning

Smoked paprika

Red pepper flakes (optional)

Lime or lemon juice

Fresh herbs (basil or parsley)


Instructions

  • Cook Orzo:
    Simmer orzo in chicken broth or water until tender, about 10 minutes. Add more liquid if needed to avoid sticking.

  • Sear the Shrimp:
    Heat olive oil in a large skillet. Add garlic, Italian seasoning, smoked paprika, and red pepper flakes. Sauté for 30 seconds, then add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.

  • Combine Ingredients:
    In the same skillet, add cherry tomatoes, sun-dried tomatoes, and olives. Stir to combine and warm through. Add the cooked orzo and shrimp back to the pan.

  • Finish and Garnish:
    Drizzle with fresh lime or lemon juice, crumble feta cheese over the top, and sprinkle with chopped basil or parsley before serving.

Notes

Substitute orzo with rice or couscous if desired.
