Description

A rich, comforting, and naturally sweetened dessert made with wholesome ingredients! This healthier twist on classic bread pudding combines Greek yogurt, ripe bananas, and maple syrup for a creamy, custardy texture with just the right amount of sweetness.


Ingredients

4 cups whole grain or day-old bread, cubed
2 ripe bananas, mashed
1 cup Greek yogurt (plain or vanilla)
¾ cup milk (dairy or non-dairy)
½ cup maple syrup
2 large eggs
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon salt
¼ cup chopped walnuts or pecans (optional)


Instructions

1️⃣ Prep the Baking Dish & Bread

  • Preheat the oven to 350°F (175°C).
  • Lightly grease an 8×8-inch baking dish.
  • Spread the cubed bread evenly in the baking dish.

2️⃣ Make the Custard Mixture

  • In a large mixing bowl, whisk together:
    • Mashed bananas
    • Greek yogurt
    • Milk
    • Maple syrup
    • Eggs
    • Vanilla extract
    • Cinnamon & salt
  • Whisk until smooth and well combined.

3️⃣ Combine & Soak

  • Pour the custard mixture over the bread cubes, making sure all pieces are coated.
  • Gently press the bread down so it absorbs the liquid.
  • Let sit for 10 minutes to soak.

4️⃣ Bake the Bread Pudding

  • If using, sprinkle chopped nuts over the top.
  • Bake for 35-40 minutes, or until the top is golden brown and the center is set.

5️⃣ Serve & Enjoy

  • Let cool slightly before serving.
  • Drizzle with extra maple syrup, top with Greek yogurt, or dust with cinnamon.
