Description

Hobo Casserole Ground Beef Recipe is a hearty, comforting dish made with ground beef, creamy mushroom soup, and tender potatoes, all topped with melted cheese. This budget-friendly casserole is easy to prepare and perfect for busy weeknights. It’s customizable, family-friendly, and guaranteed to please everyone at the table!

Ingredients

1 lb ground beef

4 medium potatoes, thinly sliced

1 small onion, diced

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

½ cup milk

2 tbsp butter, melted

Salt and pepper to taste

Optional: parsley or chives for garnish

Instructions

  • Preheat the Oven:
Set your oven to 375°F (190°C) and grease a 9×13-inch baking dish.

  • Cook the Beef:
In a skillet, cook the ground beef and diced onion over medium heat until browned and crumbly. Drain any excess grease and season with salt and pepper.

  • Prepare the Casserole:
Layer the cooked ground beef mixture in the prepared baking dish, followed by a layer of cream of mushroom soup. Add a layer of thinly sliced potatoes and pour melted butter over the top. Season with salt and pepper.

  • Add the Cheese:
Pour milk over the layers and sprinkle shredded cheddar cheese evenly on top.

  • Bake:
Cover the casserole with aluminum foil and bake for 45-50 minutes. Remove the foil and bake for an additional 10-15 minutes until the potatoes are tender and the cheese is golden brown.

  • Rest & Serve:
Let the casserole rest for a few minutes before serving. Garnish with parsley or chives if desired.

Notes

Add Veggies: Incorporate carrots, peas, or green beans for added nutrition and flavor.

Lean Version: Swap ground beef for ground turkey for a healthier option.

Cheese Variety: Try Monterey Jack, Pepper Jack, or a cheese blend for a twist on flavor.
