Ingredients

2 pounds baby potatoes (halved or quartered)

1/4 cup olive oil

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve or quarter the baby potatoes, ensuring they are all roughly the same size for even cooking.
  3. In a bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper until well combined.
  4. Place the potatoes in a large mixing bowl and drizzle the glaze over them. Toss the potatoes thoroughly to coat each piece evenly.
  5. Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper.

Notes
