Description

This Honeycrisp Apple Broccoli Salad is sweet, crunchy, and tangy, featuring fresh broccoli, crisp apples, dried cranberries, sunflower seeds, and sharp cheddar cheese tossed in a creamy honey dressing. A refreshing and nutritious side dish perfect for potlucks, BBQs, and meal prep!


Ingredients

4 cups fresh broccoli florets
2 Honeycrisp apples, cored & diced (skin-on)
½ cup red onion, thinly sliced
½ cup dried cranberries
½ cup sunflower seeds
½ cup shredded sharp cheddar cheese

For the Dressing:

¼ cup mayonnaise
1 tablespoon apple cider vinegar
1 tablespoon honey
Salt & pepper, to taste


Instructions

1️⃣ Prepare the Broccoli:

  • Wash the broccoli florets under cold water.
  • Cut into bite-sized pieces and place in a large mixing bowl.

2️⃣ Add the Apples & Onion:

  • Dice the Honeycrisp apples (keeping the skin on for extra crunch & color).
  • Add apples and sliced red onion to the broccoli.

3️⃣ Mix in the Cranberries & Seeds:

  • Gently stir in the dried cranberries and sunflower seeds.

4️⃣ Make the Dressing:

  • In a small bowl, whisk together:
    • Mayonnaise
    • Apple cider vinegar
    • Honey
    • Salt & black pepper (to taste)
  • Whisk until smooth and creamy.

5️⃣ Combine & Toss:

  • Pour the dressing over the salad.
  • Toss gently until all ingredients are well coated.

6️⃣ Add Cheese & Serve:

  • Sprinkle with shredded cheddar cheese just before serving.
  • Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
