Ingredients
Cake:
1 (15.25 ounce) package white cake mix
1 cup water
3 eggs
⅓ cup vegetable oil
2 tablespoons lime zest
1 tablespoon fresh lime juice
3 drops green food coloring (optional)
Frosting:
½ cup butter, softened
1 (8 ounce) package cream cheese, softened
2 tablespoons lime zest
½ teaspoon vanilla extract
1 ½ cups confectioners’ sugar, sifted
2 tablespoons pearlized sprinkles (optional)
Instructions
- Preheat oven to 350°F (175°C). Line 24 muffin cups with paper liners or spray with cooking spray.
- Mix cake mix, water, eggs, and vegetable oil with an electric mixer until smooth, about 2 minutes.
- Add lime zest, lime juice, and food coloring (if using); mix well.
- Pour batter evenly into prepared muffin cups.
- Bake about 18 minutes or until toothpick inserted in center comes out clean. Cool on wire rack.
- For frosting, beat butter and cream cheese until smooth and creamy.
- Add lime zest and vanilla extract; mix well.
- Gradually mix in confectioners’ sugar, ½ cup at a time, until smooth. Chill 30 minutes until thickened.
- Spread frosting on cooled cupcakes and top with sprinkles if desired.
