Description

Korean Cheese Corn is a creamy, cheesy, and slightly spicy dish made with fresh corn, mozzarella, mayo, and Sriracha. It’s a quick, flavorful side or appetizer that’s sure to be a hit!


Ingredients

Ears of corn, shucked

Kewpie mayonnaise

Sriracha

Sugar

Kosher salt

Freshly ground black pepper

Whole milk mozzarella, shredded

Green onions, thinly sliced


Instructions

  1. Preheat oven to 400°F. Lightly oil a large cast iron skillet or coat with nonstick spray.
  2. In a large bowl, combine corn, mayonnaise, Sriracha, sugar, 3/4 tsp salt, and 1/4 tsp pepper. Stir in 4 oz shredded mozzarella.
  3. Spread the corn mixture into the prepared skillet and sprinkle remaining mozzarella on top.
  4. Bake for 15 minutes, or until bubbly. Broil for an additional 2-3 minutes until golden brown.
  5. Serve immediately, garnished with thinly sliced green onions.

Notes

For extra flavor, stir in diced red bell pepper or jalapeños.

Substitute mozzarella with cheddar or provolone for a different flavor.

Adjust the Sriracha to suit your spice preference.
