Description
Korean Cheese Corn is a creamy, cheesy, and slightly spicy dish made with fresh corn, mozzarella, mayo, and Sriracha. It’s a quick, flavorful side or appetizer that’s sure to be a hit!
Ingredients
Ears of corn, shucked
Kewpie mayonnaise
Sriracha
Sugar
Kosher salt
Freshly ground black pepper
Whole milk mozzarella, shredded
Green onions, thinly sliced
Instructions
- Preheat oven to 400°F. Lightly oil a large cast iron skillet or coat with nonstick spray.
 - In a large bowl, combine corn, mayonnaise, Sriracha, sugar, 3/4 tsp salt, and 1/4 tsp pepper. Stir in 4 oz shredded mozzarella.
 - Spread the corn mixture into the prepared skillet and sprinkle remaining mozzarella on top.
 - Bake for 15 minutes, or until bubbly. Broil for an additional 2-3 minutes until golden brown.
 - Serve immediately, garnished with thinly sliced green onions.
 
Notes
For extra flavor, stir in diced red bell pepper or jalapeños.
Substitute mozzarella with cheddar or provolone for a different flavor.
Adjust the Sriracha to suit your spice preference.
