  • 1 cup chicken broth

  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • Fresh basil, for garnish

Instructions

1. Prepare the Chicken

  • Slice chicken breasts into thin cutlets.
  • In a shallow dish, mix flour, salt, and pepper. Dredge each chicken cutlet in the flour, shaking off the excess.

2. Sear the Chicken

  • Heat olive oil and butter in a large skillet over medium heat.
  • Sear the chicken for 3-4 minutes per side until golden brown. Remove from the skillet and set aside.

3. Make the Sauce

  • In the same skillet, sauté garlic until fragrant (about 30 seconds).
  • Deglaze the pan with chicken broth, scraping up any browned bits.
  • Stir in heavy cream, Parmesan cheese, red pepper flakes, oregano, and thyme. Simmer for 3-5 minutes until the sauce thickens slightly.

4. Combine & Serve

  • Add sundried tomatoes and return the chicken to the skillet.
  • Simmer for 5 more minutes, allowing the chicken to absorb the flavors.
  • Garnish with fresh basil and serve over pasta, rice, or mashed potatoes.
