Ingredients
- 2 large chicken breasts, sliced into thin cutlets
- ½ cup all-purpose flour (for dredging)
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ cup sundried tomatoes, chopped
- ½ teaspoon red pepper flakes (adjust to taste)
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- Fresh basil, for garnish
Instructions
1. Prepare the Chicken
- Slice chicken breasts into thin cutlets.
- In a shallow dish, mix flour, salt, and pepper. Dredge each chicken cutlet in the flour, shaking off the excess.
2. Sear the Chicken
- Heat olive oil and butter in a large skillet over medium heat.
- Sear the chicken for 3-4 minutes per side until golden brown. Remove from the skillet and set aside.
3. Make the Sauce
- In the same skillet, sauté garlic until fragrant (about 30 seconds).
- Deglaze the pan with chicken broth, scraping up any browned bits.
- Stir in heavy cream, Parmesan cheese, red pepper flakes, oregano, and thyme. Simmer for 3-5 minutes until the sauce thickens slightly.
4. Combine & Serve
- Add sundried tomatoes and return the chicken to the skillet.
- Simmer for 5 more minutes, allowing the chicken to absorb the flavors.
- Garnish with fresh basil and serve over pasta, rice, or mashed potatoes.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- For extra spice, add more red pepper flakes or a pinch of cayenne.
- For a cheesier twist, mix in shredded mozzarella before serving.
- For a low-carb meal, serve over zucchini noodles or cauliflower rice.
