Ingredients
1 lb steak (flank or sirloin recommended)
Salt and pepper, to taste
2 cups cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/2 cup yellow bell pepper, diced
1/4 cup fresh parsley, chopped
1/2 cup plain Greek yogurt
2 tbsp olive oil
1 tbsp lemon juice
1 garlic clove, minced
1/4 tsp paprika
1/4 tsp cumin
Almonds or nuts of choice, for garnish (optional)

Cook the Steak: Season steak with salt and pepper. Grill or sear over medium-high heat for 4–5 minutes per side (for medium-rare). Let rest before slicing thinly.

Prepare the Veggies: In a bowl, combine tomatoes, cucumber, red onion, bell pepper, and parsley. Season with a pinch of salt.

Make the Yogurt Sauce: In a small bowl, mix Greek yogurt, olive oil, lemon juice, garlic, paprika, cumin, and a little salt and pepper.
