Description

Mediterranean Steak Bowls are a fresh, vibrant, and protein-packed meal featuring juicy grilled steak, crisp veggies, and a creamy, spiced Greek yogurt sauce. This healthy 30-minute dinner is perfect for busy weeknights, meal prep, or clean eating, with Mediterranean-inspired flavors that are bold, colorful, and satisfying.


Ingredients

1 lb steak (flank or sirloin recommended)

Salt and pepper, to taste

2 cups cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 cup yellow bell pepper, diced

1/4 cup fresh parsley, chopped

1/2 cup plain Greek yogurt

2 tbsp olive oil

1 tbsp lemon juice

1 garlic clove, minced

1/4 tsp paprika

1/4 tsp cumin

Almonds or nuts of choice, for garnish (optional)


Instructions

  • Cook the Steak: Season steak with salt and pepper. Grill or sear over medium-high heat for 4–5 minutes per side (for medium-rare). Let rest before slicing thinly.

  • Prepare the Veggies: In a bowl, combine tomatoes, cucumber, red onion, bell pepper, and parsley. Season with a pinch of salt.

  • Make the Yogurt Sauce: In a small bowl, mix Greek yogurt, olive oil, lemon juice, garlic, paprika, cumin, and a little salt and pepper.

  • Assemble Bowls: In serving bowls, layer veggie mixture, steak slices, and spoonfuls of yogurt sauce.

  • Garnish: Top with chopped nuts and extra herbs if desired. Serve immediately.

Notes

Add couscous, quinoa, or greens as a base for a heartier bowl.

Swap steak for chicken, shrimp, tofu, or chickpeas to suit your diet.

Crumble feta on top for a tangy finish.

Store components separately in airtight containers in the fridge for up to 3 days.
