Description

A creamy and comforting Mediterranean-style cauliflower soup enriched with warm spices like cumin, turmeric, and smoked paprika, perfect for cozy nights or light lunches.


Ingredients

  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons olive oil, divided
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon ground turmeric
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground coriander
  • 4 cups vegetable or chicken broth
  • 1 cup coconut milk or heavy cream
  • 12 tablespoons fresh lemon juice (to taste)
  • Salt and black pepper, to taste
  • Fresh herbs (parsley, dill, or cilantro), for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Toss cauliflower florets with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden and tender.
  2. In a large pot, heat remaining 1 tablespoon olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes. Add minced garlic and cook for 1 more minute.
  3. Stir in cumin, turmeric, smoked paprika, and coriander. Cook for 30 seconds to toast the spices.
  4. Add roasted cauliflower and broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Use an immersion blender to purée the soup until smooth, or carefully blend in batches in a countertop blender.
  6. Stir in coconut milk (or heavy cream) and fresh lemon juice. Adjust seasoning with salt and pepper. Heat through gently.
  7. Garnish with fresh herbs before serving.

Notes

  • For a thinner soup, add extra broth during blending.
  • Substitute coconut milk with heavy cream for richer flavor.
  • Add roasted garlic or leeks for added depth.
  • Garnish with toasted pine nuts or a drizzle of olive oil.
