Description

Million Dollar Chicken Casserole is a creamy, cheesy, and indulgent dish featuring tender chicken and a buttery, crunchy cracker topping. Perfect for family dinners, potlucks, or using leftover chicken, this casserole is quick to make and a guaranteed crowd-pleaser.

Ingredients

4 cups cooked chicken, shredded

1 cup sour cream

1 cup mayonnaise

10.75 ounces condensed cream of chicken soup

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup crushed buttery crackers (about 1 sleeve)

½ cup unsalted butter, melted

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley for garnish

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick cooking spray or butter.

  • Mix the Chicken and Cheese Filling: In a large bowl, combine shredded chicken, sour cream, mayonnaise, cream of chicken soup, cheddar, mozzarella, Parmesan, garlic powder, onion powder, oregano, salt, and pepper. Stir until smooth and well-mixed.

  • Assemble the Casserole: Transfer the chicken mixture into the prepared baking dish, spreading it evenly.

  • Prepare the Cracker Topping: In a separate bowl, mix crushed crackers with melted butter until well-coated.

  • Add the Topping: Sprinkle the buttery cracker mixture over the chicken mixture.

  • Bake: Bake for 40 minutes or until the topping is golden and the casserole is bubbly.

  • Serve: Let the casserole rest for a few minutes before serving. Garnish with fresh parsley for added flavor and color.

Notes

You can substitute the chicken with mushrooms or a mix of veggies for a vegetarian version.

For extra crunch, add more crushed crackers or use Panko breadcrumbs.

For a spicy kick, stir in some diced jalapeños or hot sauce into the filling.
