Description

These Mini Glazed Chicken Meatloaves are a simple yet delicious weeknight meal. Ingredients

For the Meatloaves:

1 tablespoon butter or oil

1 onion, minced

1 celery stalk, minced

2 garlic cloves, minced

1 lb ground chicken (or other ground meat)

½ cup panko breadcrumbs

¼ cup milk

1 egg

1 tablespoon fresh parsley, minced

¾1 teaspoon salt

⅓ teaspoon ground black pepper

For the Glaze:

⅓ cup ketchup

2 tablespoons barbecue sauce

1 tablespoon soy sauce

1 tablespoon honey


Instructions

  • Preheat the oven: Set your oven to 400°F (200°C).

  • Sauté vegetables: In a skillet, heat the butter or oil and sauté the minced onion, celery, and garlic until softened and golden. Let the mixture cool slightly.

  • Prepare breadcrumbs: Place the panko breadcrumbs in a bowl, pour the milk over them, and let them soak for a few minutes until the milk is absorbed.

  • Mix meatloaf ingredients: In a large bowl, combine the sautéed vegetables, ground chicken, soaked breadcrumbs, egg, parsley, salt, and pepper. Mix until well combined.

  • Shape meatloaves: Portion the mixture into small meatloaves (about ¼ cup each) and arrange them on a baking sheet.

  • Bake: Bake the meatloaves uncovered for 15 minutes in the preheated oven.

  • Make the glaze: While the meatloaves are baking, whisk together the glaze ingredients—ketchup, barbecue sauce, soy sauce, and honey.

  • Glaze the meatloaves: After 15 minutes, brush the meatloaves with the glaze and bake for an additional 5-7 minutes until fully cooked and the glaze has caramelized.

  • Serve: Let the meatloaves cool for a few minutes before serving.

Vegetable Add-ins: Add finely grated zucchini, carrots, or bell peppers to the meat mixture for extra nutrition and flavor.
