Description

Ingredients

1 cup all-purpose flour

1/4 cup unsalted butter, chilled and cubed

2 tbsp granulated sugar (adjust based on sweetness preference)

1 cup mixed berries (fresh or frozen)

1/4 tsp salt

1 tbsp cornstarch

1 tbsp lemon juice

23 tbsp cold water

1 beaten egg (optional, for egg wash)


Instructions

  1. In a mixing bowl, combine flour and salt. Cut in chilled butter until the mixture resembles coarse crumbs. Gradually add cold water until dough forms.
  2. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. In a bowl, combine mixed berries with sugar, cornstarch, and lemon juice; toss gently to coat.
  5. On a floured surface, roll out the chilled dough into a rough circle about 12 inches wide.
  6. Transfer rolled dough onto parchment paper on a baking sheet. Spoon berry filling into the center and fold edges over to create a rustic border.
  7. Brush with egg wash if desired for a golden finish.
  8. Bake in the preheated oven for about 35-40 minutes until bubbly and golden brown.

Notes

Frozen berries work well—just drain any excess liquid before adding them to the filling.

To avoid soggy crust, cornstarch thickens the berry juices.

The egg wash adds a golden finish, but it’s optional.

Substitute the egg wash with a milk or cream wash for a dairy alternative.

To prevent burning, cover the edges with foil if they brown too quickly.

Make the crust ahead and refrigerate for up to 2 days before using.
