Description

This Keto Raspberry Cottage Cheese Ice Cream is a creamy, protein-packed dessert that’s both keto-friendly and low-carb. Blended with fresh raspberries and cottage cheese, it offers a refreshing, tangy flavor. Easy to make with a Ninja Creami or blender, it’s the perfect guilt-free treat to satisfy your sweet cravings. Customize with your favorite toppings for a delightful, healthy dessert.

Ingredients

For the ice cream base:

  • 1 cup full-fat cottage cheese (Good Culture recommended)
  • ½ cup raspberries (fresh or thawed frozen raspberries)
  • ¼ cup powdered keto-friendly sweetener (erythritol, monk fruit, or allulose)

Optional crunchy topping:

  • 1 tablespoon butter
  • ¼ cup pecans, chopped
  • 1 teaspoon keto sweetener

Instructions

  • Prepare the Nut Topping (Optional): In a skillet, melt butter over medium heat. Add chopped pecans and sweetener, stirring for about 3–4 minutes until golden and fragrant. Let cool completely.
  • Blend the Base: Add cottage cheese to a blender and blend until smooth. Add half the raspberries and sweetener, then blend again until well combined.
  • Freeze the Mixture: Pour the base into a shallow freezer-safe container. Gently fold in the remaining raspberries to create swirls. Top with cooled pecans (optional). Cover and freeze for 2–4 hours.
  • Serve and Enjoy: Scoop into bowls or cones. If frozen solid, let the ice cream sit at room temperature for 10-15 minutes before serving.

Notes

  • Variations: For a chocolate twist, add cocoa powder and sugar-free chocolate chips. For a tangy twist, swap raspberries for blackberries and add lemon zest.
  • No Ninja Creami?: If you don’t have a Ninja Creami, freeze the mixture in a loaf pan and stir every hour to break up ice crystals.
  • Sweetener Tip: Add more sweetener if you prefer a sweeter ice cream.
  • Dairy-Free Option: Substitute cottage cheese with dairy-free alternatives like blended tofu or coconut-based yogurt for a non-dairy version.
