Ingredients
- ½ cup cottage cheese
- ½ cup almond flour
- 1 scoop chocolate protein powder
- 3 tablespoons cocoa powder
- 2 tablespoons maple syrup or honey
- 2 tablespoons peanut butter or almond butter
- ½ teaspoon vanilla extract
- ¼ cup dark chocolate chips
- ¼ cup melted dark chocolate (for coating, optional)
Instructions
1. Blend Cottage Cheese: In a food processor, blend the cottage cheese until smooth.
2. Make the Dough: In a mixing bowl, combine the blended cottage cheese, almond flour, protein powder, cocoa powder, maple syrup, peanut butter, and vanilla extract. Stir until a thick dough forms.
3. Fold in Chocolate Chips: Gently fold in the dark chocolate chips.
4. Roll into Bites: Roll the dough into small bite-sized balls and place them on a parchment-lined plate.
5. Coat with Chocolate (Optional): If desired, dip each bite in melted dark chocolate and place back on parchment paper.
6. Chill: Refrigerate for at least 30 minutes to firm up.
