Ingredients

  • 1215 large cremini mushrooms, cleaned and stems removed
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • ¼ cup onion, finely chopped
  • ¼ cup bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 6.5 oz can minced clams, drained
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • Salt and pepper, to taste
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Romano cheese
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Clean mushrooms gently with a damp cloth and remove stems. Finely chop the stems.
  3. In a skillet over medium heat, melt olive oil and butter. Sauté chopped mushroom stems for 3-5 minutes until softened.
  4. Add chopped onion and bell pepper; cook until translucent, about 2-3 minutes. Stir in garlic and cook for 1 minute. Remove from heat.
  5. Stir in minced clams, breadcrumbs, Parmesan, basil, oregano, salt, and pepper. Mix well.
  6. Spoon the stuffing mixture generously into each mushroom cap.
  7. Combine mozzarella, Romano, and Parmesan cheeses in a bowl. Sprinkle cheese mixture evenly over the stuffed mushrooms.
  8. Arrange mushrooms in a baking dish and bake for 15 minutes until tender.
  9. Broil for an additional 2-3 minutes until cheese is golden brown, watching carefully to avoid burning.
  10. Garnish with fresh parsley and serve with lemon wedges.
