Description

A quick and easy one-pot casserole combining all the flavors of a classic cheeseburger with pasta, ground beef, tomato sauce, and melted cheddar cheese. Perfect for a hearty, comforting weeknight meal.


Ingredients

1 tablespoon olive oil

1 ½ pounds ground beef

1 onion, diced

Kosher salt and freshly ground black pepper, to taste

1 (28-ounce) can diced tomatoes, undrained

1 (8-ounce) can tomato sauce

2 cups chicken broth

¼ cup ketchup

1 tablespoon Dijon mustard

1 pound rotini pasta

2 cups shredded cheddar cheese

1 Roma tomato, diced

2 green onions, sliced


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground beef and diced onion. Cook until browned and crumbled, about 3-5 minutes. Season with salt and pepper. Drain excess fat.
  2. Stir in diced tomatoes, tomato sauce, chicken broth, ketchup, mustard, pasta, and 2 cups water.
  3. Bring to a boil, cover, reduce heat, and simmer until pasta is cooked, about 13-16 minutes, stirring occasionally.
  4. Remove from heat. Sprinkle shredded cheddar cheese on top, cover, and let stand 2 minutes until cheese melts.
  5. Serve garnished with diced tomato and sliced green onions.

Notes

Substitute ground turkey or chicken for a leaner option.

Add diced bell peppers or mushrooms with onions for extra veggies.

Use gluten-free pasta for gluten-free version.

Top with pickles or extra ketchup for classic cheeseburger flavor.

Stir frequently during cooking to prevent pasta sticking.
