Peach Cobbler Donut Hand Pies are a delightful and portable dessert that combines juicy peaches, cinnamon sugar, and a buttery pastry crust. Ingredients

For the Dough:

1 tube refrigerated biscuit dough (or use homemade pie crust for extra flair)

Optional: Egg wash (1 egg beaten with 1 tbsp water) for shine

For the Filling:

2 cups fresh or frozen sliced peaches (thawed if frozen)

2 tbsp granulated sugar

1 tsp ground cinnamon

Pinch of nutmeg

1 tbsp cornstarch (mixed with 1 tbsp water to thicken the filling)

For the Topping:

Streusel:

½ cup brown sugar

¼ cup all-purpose flour

3 tbsp cold butter (cut into small pieces)

OR Glaze:

1 cup powdered sugar

23 tbsp milk (or peach juice)

Dash of vanilla extract


Instructions

  1. Prepare the Filling: In a medium saucepan, combine the sliced peaches, granulated sugar, cinnamon, and nutmeg. Cook over medium heat for 5–7 minutes until the peaches soften. Stir in the cornstarch mixture to thicken the filling. Let it cool completely.
  2. Roll Out the Dough: Preheat your oven to 375°F (190°C). Roll out each biscuit or pie crust circle to about ⅛-inch thick. Cut the dough into circles with a donut cutter or round cookie cutter. Reserve scraps for re-rolling.
  3. Assemble the Hand Pies: Place a spoonful of cooled peach filling onto half of each dough circle. Brush the edges of the dough with water or milk to help seal. Fold the dough over the filling and press the edges with a fork to seal.
  4. Add the Topping: Sprinkle the streusel topping over the pies or brush with egg wash for a golden sheen.
  5. Bake: Place the hand pies on a parchment-lined baking sheet and bake for 15–20 minutes, or until golden brown and puffed.
  6. Drizzle the Glaze (Optional): Whisk together powdered sugar, milk/peach juice, and vanilla extract. Drizzle over the warm pies for added sweetness.

Notes

Don’t Overfill: Avoid overfilling to prevent the pies from bursting open during baking.

Use Fresh Peaches: Fresh peaches in season provide the best flavor, but frozen works well too!

Make Ahead: Prepare the filling ahead of time and refrigerate until ready to assemble.
