Description

Pear and Gorgonzola Flatbread is a quick, elegant dish combining sweet pears, tangy Gorgonzola cheese, crunchy walnuts, and fresh arugula on a crispy puff pastry or flatbread base. Drizzled with honey, it’s a perfect blend of sweet and savory.


Ingredients

1 sheet of puff pastry or flatbread

2 pears, thinly sliced

4 oz (120g) Gorgonzola cheese, crumbled

1/4 cup (60ml) honey

1/4 cup (30g) chopped walnuts

A handful of arugula leaves

1 tablespoon olive oil

Freshly cracked black pepper

Optional substitutions: Swap Gorgonzola with goat cheese or blue cheese. Use pecans instead of walnuts.


Instructions

  1. Preheat the Oven: Set the oven to 400°F (200°C).
  2. Roll Out the Puff Pastry: Lightly flour your surface and roll out the puff pastry. Place it on a baking sheet. If using flatbread, place it directly on the sheet.
  3. Drizzle Olive Oil: Evenly drizzle olive oil over the flatbread or puff pastry base.
  4. Arrange the Pear Slices: Slice the pears thinly and arrange them overlapping to cover the entire base.
  5. Scatter the Cheese: Sprinkle crumbled Gorgonzola cheese evenly over the pears.
  6. Bake: Place the flatbread in the oven and bake for 15-20 minutes, until golden and crispy.
  7. Final Touches: Drizzle honey over the baked flatbread. Sprinkle with walnuts, fresh arugula, and cracked black pepper.

Notes

For an alternative, use apples, figs, or peaches for the fruit.

Pre-bake the puff pastry for 5 minutes before adding toppings for an extra crispy base.

Try adding caramelized onions, fresh thyme, or balsamic glaze for extra flavor.
