Description

Pistachio Brigadeiro is a Brazilian-inspired sweet treat that combines the rich, nutty flavor of pistachios with the classic fudgy texture of brigadeiros. These bite-sized confections are easy to make and perfect for special occasions or satisfying your sweet tooth.

Ingredients

  • 1 can (14 ounces) sweetened condensed milk
  • 2 tablespoons unsalted butter
  • 1/2 cup finely ground pistachios
  • Pinch of salt
  • Extra finely ground pistachios for rolling (about 1/4 cup)

Instructions

  1. Prepare the Mixture:

    • In a medium saucepan, combine the sweetened condensed milk, butter, finely ground pistachios, and a pinch of salt.
  2. Cook the Mixture:

    • Place the saucepan over medium heat. Stir constantly until the mixture thickens and begins to pull away from the sides of the pan, about 10-12 minutes.
  3. Cool the Mixture:

    • Transfer the mixture to a greased dish and allow it to cool to room temperature. Then, refrigerate for about 2 hours until firm.
  4. Shape the Brigadeiros:

    • Lightly grease your hands. Take small portions of the chilled mixture and roll them into 1-inch balls.
  5. Roll in Pistachios:

    • Place the extra finely ground pistachios in a shallow bowl. Roll each brigadeiro ball in the pistachios until fully coated.
  6. Serve:

    • Arrange the pistachio-coated brigadeiros on a serving plate. Enjoy immediately or store in an airtight container at room temperature for up to a week.

Notes

  • Vegan Version: Use sweetened condensed coconut milk and dairy-free butter for a vegan-friendly version.
  • Flavor Enhancements: Add a teaspoon of rose water or orange blossom water for a floral twist.
  • Coating Alternatives: Roll the brigadeiros in chopped hazelnuts, shredded coconut, or cocoa powder for variety.
