Ingredients
- 4 bone-in, skin-on chicken thighs
- 4 bone-in, skin-on chicken drumsticks
- ¼ cup fresh lime juice
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon oregano
- 1 teaspoon ground cumin
- ½ teaspoon cayenne pepper
- 1 teaspoon adobo seasoning
- 1 teaspoon sazón seasoning
- ½ cup all-purpose flour
- ½ cup cornstarch
- 1 teaspoon paprika
- 1 teaspoon baking powder
- 2 tablespoons olive oil spray
Instructions
1. Marinate the Chicken:
In a bowl, combine lime juice, garlic, salt, black pepper, oregano, cumin, cayenne, adobo, and sazón. Add the chicken, ensuring it’s well coated. Marinate for 1-2 hours (do not exceed 2 hours, as the acid can toughen the meat).
2. Prepare the Coating:
In a separate bowl, mix flour, cornstarch, paprika, and baking powder.
3. Coat the Chicken:
Remove chicken from the marinade and let excess liquid drip off. Dredge each piece in the flour mixture, shaking off excess.
4. Preheat the Air Fryer:
Set to 375°F (190°C) for 5 minutes.
5. Air Fry the Chicken:
Lightly spray the chicken with olive oil spray. Place in a single layer in the air fryer basket. Cook at 375°F for 25-30 minutes, flipping halfway through, until golden brown and crispy.
