Ingredients

For the Cookies:

  • ¾ cup (212g) creamy peanut butter
  • ½ cup (113g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (110g) packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 ¼ cups (156g) all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (180g) chopped Reese’s peanut butter cups
  • ½ cup (90g) mini chocolate chips

Optional Chocolate Drizzle:

  • ¼ cup melted chocolate chips

Instructions

1. Prepare the Dough

  • In a large bowl, beat peanut butter and butter together until smooth and creamy.
  • Add granulated sugar and brown sugar, mixing until well combined.
  • Beat in vanilla extract and egg until fully incorporated.

2. Mix Dry Ingredients

  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture and stir until just combined.

3. Fold in the Candy

  • Gently fold in chopped Reese’s peanut butter cups and mini chocolate chips.

4. Shape the Cookies

  • Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
  • Use a 1.5-inch cookie scoop to portion the dough onto the baking sheet, spacing them 2 inches apart.
  • Lightly press each cookie with a sugar-dipped glass to flatten slightly.

5. Bake the Cookies

  • Bake for 10 minutes, or until the edges are set but the centers remain soft.
  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

6. Optional Chocolate Drizzle
