Description

These Rice Krispie Chocolate Chip Cookies offer the perfect balance of chewy and crunchy! Packed with gooey chocolate chips and crispy Rice Krispies, this fun twist on a classic cookie is easy to make and absolutely delicious. Perfect for snack time, parties, or bake sales!

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 ½ cups Rice Krispies cereal

Instructions

1. Prepare the Dough:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In a separate bowl, whisk together flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Gently fold in the chocolate chips and Rice Krispies, being careful not to crush the cereal too much.

2. Bake the Cookies:

  1. Scoop about 1 ½ tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
  2. Bake for 10–12 minutes, or until the edges are golden brown and the centers remain slightly soft.
  3. Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
