Ingredients

Instructions

1. Roast the Potatoes:

  4. Roast for 30–35 minutes, flipping halfway through, until golden brown and tender.

2. Prepare the Dressing:

  1. In a small bowl, whisk together:
    • Mayonnaise
    • Mustard
    • Minced garlic
    • Lemon juice
    • Maple syrup
    • Salt, black pepper, and chili flakes (if using)
  2. Whisk until smooth and well combined.

3. Assemble the Salad:

  1. Once the potatoes are done, let them cool slightly.
  2. In a large mixing bowl, combine:
    • Roasted potatoes
    • Chopped cucumber
    • Green onions
    • Pistachios
    • Fresh dill and parsley
  3. Pour the dressing over the salad and gently toss to coat everything evenly.

4. Serve:
