Instructions
1. Roast the Potatoes:
- Preheat oven to 425°F (220°C).
- Place quartered potatoes on a parchment-lined baking sheet.

- Roast for 30–35 minutes, flipping halfway through, until golden brown and tender.
2. Prepare the Dressing:
- In a small bowl, whisk together:

- Mustard
- Minced garlic
- Lemon juice
- Maple syrup
- Salt, black pepper, and chili flakes (if using)
- Whisk until smooth and well combined.
3. Assemble the Salad:
- Once the potatoes are done, let them cool slightly.
- In a large mixing bowl, combine:

- Chopped cucumber
- Green onions
- Pistachios
- Fresh dill and parsley
- Pour the dressing over the salad and gently toss to coat everything evenly.
