Description

Roasted Potato & Sausage Hash with Spicy Tomato Butter is a hearty, flavorful dish featuring crispy roasted potatoes, savory sausage, and vibrant vegetables, all finished with a zesty spicy tomato butter glaze. Perfect for breakfast, brunch, or dinner.

Ingredients

  • 4 large potatoes (Yukon Gold or Russet), diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 12 oz Italian sausage, sliced (or preferred variety)
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 3 tablespoons unsalted butter
  • ½ teaspoon red pepper flakes (adjust to taste)
  • Fresh herbs for garnish (parsley or cilantro)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced potatoes with olive oil, salt, pepper, and paprika in a large bowl until well coated.
  3. Spread potatoes evenly on a baking sheet and roast for 20 minutes, tossing halfway, until golden and crispy.
  4. While potatoes roast, heat a skillet over medium heat and brown sausage slices for 5-7 minutes.
  5. Add diced onion and red bell pepper to the skillet and cook until softened, about 5 minutes.
  6. Stir in minced garlic and sauté for 1-2 minutes until fragrant.
  7. Transfer roasted potatoes into the skillet and gently mix to combine all ingredients.
  8. In a small saucepan, melt butter over low heat. Add drained diced tomatoes and red pepper flakes. Simmer for 3-5 minutes to meld flavors.
  9. Drizzle the spicy tomato butter over the hash and toss lightly to coat evenly.
  10. Serve hot, garnished with fresh herbs.

Notes

  • Add mushrooms or spinach for extra nutrition.
  • Use smoked paprika for a smoky depth.
  • Adjust spiciness by modifying red pepper flakes amount.
  • Sprinkle grated Parmesan or cheddar cheese on top if desired.
